So it’s Easter Sunday, which means a roast is a must! Love cooking roasts, ensuring that the meat is succulent and the roast potatoes crispy! Tonight I did roast chicken stuffed with pork and sage stuffing, roast potatoes, chipolatas wrapped in bacon, carrots, courgettes and gravy. The courgettes were slow cooked in olive oil and garlic, with the juice of a lemon added at the end… I really enjoy doing roasts, I reckon its all in the timing. The gravy is made with stock, flour, and juice from the bird, white wine and water, great way to clean the pan as well! There is something magical about making a gravy, so good over the chicken and the roast potatoes. Now stuffed….
